Sometimes garlic carries a stinky reputation, but did you know it has notable health benefits? In fact, garlic has been proven to help decrease cholesterol and blood pressure. Ingredients
- 4 bone-in, skin-on chicken thighs
- Kosher salt and freshly ground black pepper, to taste
- 1 tablespoon ghee (clarified butter, commonly used as a substitute for butter)
- 40 cloves garlic, peeled
- 3/4 cup low-sodium chicken broth
- 1/2 tablespoon dried thyme
- 4 small new potatoes, cut into quarters
- 1 tablespoon all-purpose flour
- 1 tablespoon milk
Directions
- Season chicken with salt and pepper.
- Heat ghee in a pan over medium-high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2 to 3 minutes per side. Set aside.
- Add garlic to the skillet and cook, stirring frequently, until golden brown, about 4 to 5 minutes. Add chicken broth and bring to a boil. Add chicken, potatoes, and thyme. Reduce heat to low, cover and simmer until chicken is cooked through, about 30 minutes. Set chicken aside, reserving the juices in the pan.
- In a small bowl, whisk together flour and milk. Whisk in flour mixture to the pan until slightly thickened, about 1 to 2 minutes. Season with salt and pepper to taste.
- Plate chicken and potatoes. Spoon sauce over both and serve immediately.
